General Information:

Microgreens are tiny, nutrient-dense greens that pack a punch far beyond their size. These miniature versions of familiar vegetables and herbs are harvested at an early stage of growth, just after the first true leaves appear. Despite their small stature, microgreens are bursting with flavor and boast an impressive array of health benefits. They are superfoods and their vitamin and antioxidant levels are up to 40x higher than mature greens. They are richer in macro minerals such as calcium, magnesium, phosphorus, and potassium as well as micro minerals such as iron, zinc, and copper

Sort of, but not quite! Sprouts are usually grown in water and harvested around 3-5 days after germination. They are the first stage of growth before microgreens and possess a milder flavor. Microgreens are typically harvested around 7-14 days and possess intense flavors. Microgreens are typically more nutritious than sprouts and have more fiber content, too.

We pride ourselves on having one of the most diverse selections of greens in the area to choose from. We can grow more conventional greens such as Rambo radish, kale, cabbage, and sunflowers or more specialty varieties such as amaranth, carrots, and cilantro. Feel free to contact us for more info. CALL ME. We are a very small operation of two, when you call you are speaking to the owners. If you have any issues we will make it right. We are only human and mistakes are bound to happen. I just ask you approach us respectfully as we will show you the utmost respect back. If you do, I can assure you we can find a solution.

You sure can! We pride ourselves on having a “microfarm.” We live on a little less than an acre of land and love to share our knowledge with others on how to make the most use out of small space. Feel free to call or email us and we can set up a time for you to tour our property and establishment.

Health and Safety:

We have strict cleanliness policies to protect against contamination. We run a multi system HEPA air
purifier 24/7 that purifies with UV-C Light and Ionizer packs. All of our trays are washed and sprayed
with disinfectant after each grow. Our building is designated solely for microgreens and is
temperature regulated. The entrance has anti-insect PVC strip curtains infused with citronella to
reduce pests and help insulate. We also have bug strips inside the unit to further prevent those
pests that do get in.

Our greens are extremely pure and we do not use any pesticides or preservatives. For this reason, a good spray from your sink faucet to rinse off any bits of leftover dirt would be just fine!

We do! We can deliver within the town of Sylva, Webster, Dillsboro, and parts of Cullowhee for FREE
with a minimum order of $25 or in surrounding towns like Waynesville and Franklin within a $50
minimum order. For all other orders, delivery fees we will address individually on a case-by-case
basis. You can also come and pick up your greens at our location or on Saturdays at the farmers
market. We are happy to accommodate if you let us know Friday prior to farmers market, we can
reserve some for you and give you them at the market.

Usage and Storage:

If kept in the fridge, microgreens can last on average between 1-2 weeks, we have tested this and have gotten up to 3 weeks in our fridge that cools at a temp of 35 degrees F, but we highly recommend consuming them sooner rather than later to ensure peak freshness.
Microgreens are extremely versatile. They can be used as garnish or as a nutritional or flavor boost in many different recipes and dishes. In order to retain their highest nutrient level, they are best eaten raw but just like full grown vegetables they lose up to 50% of their nutritional value if cooked longer than 30 minutes- so don’t overcook them! Growing and Sourcing:

All of our microgreens are grown with traditional soil methods. Our soil we use is a mixture of soil, coco coir, and perlite to help with drainage, water absorption, and aeration. Each microgreen is grown in a 1020 tray. You better not be using them cancer chemicals! There are no additional chemicals used on our products that would cause cancer, developmental and/or reproductive harm. The only chemical we use is ZeroTol HC which is a fungicide/bactericide/ algaecide. It is food grade hydrogen peroxide and also helps prevent against mold. Other than that, its just soil, water, and dedication.

Our main provider is Greener Harvest but we also may use True Leaf Market and a couple others
depending on inventory shortages and pricing
